First up...the smoked chicken with Alabama White BBQ...the smoked chicken was so tasty all by itself...great flavor and quite succulent. The white sauce was a new one for me. Traditional Alabama barbecue sauce uses mayonnaise as its base rather than tomato sauce, vinegar, or any of the other traditional barbecue sauce bases. It was wonderful on the smoked chicken.
The brisket was last...not my favorite after eating the other two...not as flavorful and a little dry which means lots of sauce was applied. The Carolina BBQ sauce was a vinegar based one. I usually like this type of sauce but again it was my least favorite. I ended up eating the brisket with the Georgia sauce. When I come back next year, I'll stick to the smoked chicken with Alabama sauce and the pulled pork with Georgia sauce. I was quite surprised to find such a great BBQ place in Iowa.
